Instructions

1. In a large skillet, heat olive oil over medium-high heat. Add onion, jalapeno, and garlic, and cook until softened, about 5 minutes. Add ground beef and cook until browned and no longer pink, breaking up the meat with a wooden spoon.

2. Stir in chili powder, cumin, oregano, and salt, and cook for 1-2 minutes, stirring constantly.

3. Add black beans, corn, and salsa, and cook until heated through, about 5 minutes.

4. To assemble the burritos, place a tortilla on a flat surface, and spoon some of the beef mixture into the center. Top with cheese, sour cream, and guacamole, if desired. Roll up tightly, and repeat with remaining tortillas and filling.

5. To serve, cut each burrito in half and serve hot with additional salsa and sour cream on the side.
