Baked Shredded Chicken Burrito Recipe

Ingredients
- 1 pound boneless, skinless chicken breasts
- 1 cup uncooked white rice
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 can (10 ounces) diced tomatoes and green chilies, drained
- 1/2 cup salsa
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 8 burrito-sized flour tortillas
- 2 cups shredded Mexican cheese blend
- Sour cream and additional salsa for serving (optional)
Instructions
- Preheat your oven to 375°F.
- Place the chicken breasts in a baking dish and season them with the chili powder, cumin, garlic powder, and salt. Cover the dish with foil and bake for 20-25 minutes or until the chicken is cooked through.
- While the chicken is baking, cook the rice according to the package instructions.
- In a large bowl, combine the cooked rice, black beans, corn, diced tomatoes and green chilies, salsa, and shredded cheese. Mix well.
- Once the chicken is done, remove it from the oven and shred it using two forks. Add it to the rice mixture and stir to combine.
- Place a heaping 1/2 cup of the chicken and rice mixture in the center of each tortilla. Fold in the sides and roll up tightly, placing the seam side down in a 9x13 inch baking dish. Repeat with the remaining tortillas and filling.
- Bake the burritos for 15-20 minutes or until heated through and the tortillas are lightly golden brown. Serve with sour cream and additional salsa, if desired.
Tips
- If you're short on time, you can use pre-cooked, shredded chicken instead of baking your own.
- Feel free to adjust the spice level by using more or less chili powder and cumin.
