Instructions:

  1. Place the chicken breasts, black beans, diced tomatoes, chicken broth, chili powder, cumin, garlic powder, onion powder, and salt in the Instant Pot.
  2. Close the lid and make sure the valve is set to "sealing."
  3. Press the "manual" button and set the timer for 10 minutes.
  4. Once the timer goes off, let the pressure release naturally for 10 minutes.
  5. After the natural release, carefully turn the valve to "venting" to release any remaining pressure.
  6. Remove the chicken from the Instant Pot and shred it with a fork.
  7. Return the shredded chicken to the Instant Pot and add the uncooked white rice.
  8. Close the lid and make sure the valve is set to "sealing."
  9. Press the "manual" button and set the timer for 8 minutes.
  10. Once the timer goes off, let the pressure release naturally for 10 minutes.
  11. After the natural release, carefully turn the valve to "venting" to release any remaining pressure.
  12. Remove the lid and stir in the shredded cheddar cheese and chopped cilantro.
  13. Serve the chicken and rice mixture in tortillas and top with sour cream and guacamole, if desired.
