If you're a fan of Chipotle's burrito bowls, you know they can be a bit pricey. But did you know that you can make a copycat version at home? Not only will you save money, but you'll also have control over the ingredients and portions. Here's how to make a Chipotle chicken burrito bowl at home.
Ingredients:
- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1/2 cup chopped cilantro
- 1 lime, juiced
- 1 avocado, sliced
- 1 cup cooked white or brown rice
- 1/4 cup salsa
- 1/4 cup sour cream or Greek yogurt
Instructions:
- Preheat your oven to 375 degrees F.
- In a small bowl, combine the cumin, chili powder, garlic powder, paprika, and a pinch of salt and pepper. Rub the chicken with the spice mixture, making sure it's coated on all sides.
- Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the chicken and cook for about 2 minutes on each side, until browned.
- Transfer the skillet to the oven and bake for 15-20 minutes, or until the chicken is cooked through.
- While the chicken is cooking, prepare the rice according to package instructions.
- In a medium bowl, mix together the black beans, corn, cilantro, and lime juice.
- When the chicken is done, let it cool for a few minutes, then slice it into strips.
- To assemble the bowls, start with a scoop of rice in the bottom. Add a scoop of the black bean and corn mixture, followed by some sliced avocado and chicken. Top with salsa and sour cream or Greek yogurt.
Tips:
- Want to add some extra veggies to your bowl? Try adding some sautéed bell peppers and onions.
- Not a fan of cilantro? You can leave it out or substitute it with parsley.
- Prefer brown rice over white rice? Go for it! Just adjust the cooking time accordingly.
- Feel free to adjust the spice level to your liking by adding more or less chili powder or cayenne.
