Ingredients:
- 1 pound chicken breast, cut into bite-sized pieces

- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 cup salsa
- 1 cup rice
- 2 cups chicken broth
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, avocado, cilantro
Instructions:
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned, about 5 minutes. Remove from pot and set aside.
