  • 1 tsp. chili powder
  • 1 tsp. cumin
  • 1 tsp. smoked paprika
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 cup olive oil
  • 1 red bell pepper, sliced
  • 1 yellow onion, sliced
  • 1 can black beans
  • 1 cup cooked rice
  • 1 avocado, sliced
  • 1 lime, sliced
  • Sour cream, for serving (optional)
  • Cilantro, chopped, for serving (optional)

  1. Preheat the oven to 400°F.
  2. In a small bowl, mix together chili powder, cumin, smoked paprika, salt, and black pepper.
  3. Place the steak on a baking tray and rub the spice mixture all over it.
  4. Bake the steak for 20-25 minutes or until it reaches your desired doneness.
  5. While the steak is cooking, heat the olive oil in a pan over medium heat. Add the sliced bell pepper and onion and sauté for about 5 minutes or until they are softened and slightly caramelized.
  6. Add the black beans to the pan and heat through.
