Instructions:

  1. In a large bowl, whisk together the eggs, milk, salt, and pepper until smooth. Set aside.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the onion, bell peppers, and jalapeño and cook, stirring occasionally, until softened, about 5 minutes.
  3. Pour the egg mixture over the vegetables and cook, stirring occasionally, until set, about 5-7 minutes. Remove from heat and let cool.
  4. Meanwhile, preheat the oven to 375°F (190°C).
  5. Wrap the tortillas in aluminum foil and bake in the preheated oven for 10-15 minutes, or until warmed through.
  6. Place a scoop of the egg mixture and a sprinkle of shredded cheese onto a tortilla. Fold the sides of the tortilla over the filling and then fold the bottom edge up and over the filling. Roll tightly into a burrito.
  7. Wrap the burrito tightly in aluminum foil and place in a labeled and dated Ziploc bag.
  8. Freeze for up to 3 months.
  9. To reheat, remove the foil and wrap in a paper towel. Microwave on high for 2-3 minutes, or until heated through.
