Instructions

  1. Preheat oven to 425 degrees Fahrenheit. Cut the pork loin into bite-size pieces and set aside.
  2. Drain and rinse the can of black beans and set aside.
  3. Cut the bell pepper and onion into bite-size pieces and set aside.
  4. In a small bowl, combine the brown sugar, chili powder, cumin, salt, pepper, and crushed garlic.
  5. In a large bowl, toss the pork with 2 tablespoons of olive oil and the spice mixture. Mix well to ensure the pork is coated evenly.
  6. Spread the pork out on a baking sheet and bake for 15-20 minutes, or until the pork is cooked through.
